In March I purchased 60 lbs of nuts - pecans, almonds, walnuts (Unsalted). I used my food saver jar attachment to seal them up in wide-mouth jars. I opened 1 jar of each last night to see how they were doing after 4 months. They were as fresh as the day I sealed them! Will check them again in another 4 months. I would love to be able to get to the 1 year mark.

Will be interesting to see when they go rancid.

Will be interesting to see when they go rancid. It will be interesting! Hopefully none of them will go to waste. I'll start using them after the next 4-month check. The Plan is to leave 1 jar of each alone & check them periodically for freshness before ordering more. It would be wonderful if they made it for 1 year. What a great prep that would be.

Also wanted to mention - I just opened up 1 can of Planter's Mixed Nuts and 1 can of Planter's Cashews. Both have been stored for over 2 years and were just fine. Honey Roasted Peanuts & smoked almonds were stale and the expiration date was the same. Not rancid, just stale.

I use that attachment on half gallon jars for leftover #10 cans of stuff I open. The 1 year old FD mac and cheese tasted just fine. The over-a-year-old (in the jars) dehydrated and FD veggies haven't suffered any degradation that I can taste.

That food saver attachment is the best thing I've discovered to help in my prepping of regular foods. I have cases & cases of 'fun stuff' stored in them and haven't had any problem with anything going stale yet. Was concerned about the nuts, but it's looking good for them, too.

I wonder if heat and cold will effect dry / dehydrated foods stored in this manner? We have almost no room left here in the house (all filled up with #10's and mason jars already) and I would consider getting some storage out into the sheds if it's a good plan. Lord knows, we have enough (and to spare) empty jars of all sizes to use up.

I have mine in a cool basement, but lots of what's stored in mine would melt in a shed.
