My former bishop's brother has a company that sells a home freeze drying unit. Check it out. It's much too expensive for me, but if it were much cheaper I'd buy it in a second.

A guy in our ward who is a physicist says that even at the price it is at, it is cheaper than he could put together himself from parts he could purchase.

My wife and I have already looked into these units.
We're impressed and if not for the fact that we already have well over our year supply of food, this would be at the top of our list of things to get next.
Freeze Dried foods last far longer than anything else out there (if properly sealed and stored), and the unit would be worth its weight in gold, right up to the time of the collapse.
Having said that, its still on our list, but quite a ways down.
