I just saw on the Ball website that you can freeze eggs for a YEAR?

Has anyone done this? What do you do - just stick the carton in the freezer?

This is really good news, cuz one thing I was really gonna' miss when TSHTF was eggs. :yummie:

You need to scramble the eggs before you freeze them.

Otherwise, I think the egg would crack once it was frozen.

This past summer I scrambled & froze the eggs we used for a family reunion breakfast. I put about 20 eggs (scrambled) into a gallon zip lock bag and froze them overnight. Then I put them in a cooler with ice, (since we were camping) and by the morning, the eggs were starting to soften, but were still quite cold. I just squeezed them out of the zip lock bags onto the hot griddle...and scrambled them up.

It worked very well.

They had an orange-coloring to them while in the bag, but once they were cooked they looked (and tasted!) just fine.

So, I haven't stored them for a year, but they are certainly "freezable."

You are right, I will also miss fresh eggs once TSHTF. I have some frozen eggs in the freezer now.

Egg Beaters-type eggs that come scrambled in milk-type cartons also freeze well and can be used as an egg replacement too.

Here's some instructions for freezing eggs, too...

You can freeze them in an icecube tray and then put them in baggies... but it sounds like you should mix up the white and yolk before you do that.

If I may Alma;

The Battle of Lexington and Concord, also known as the start of the American Revolutionary War, began on April 19th, 1775.

This is a great little thread! I never knew that you could freeze up eggs, this will be great when I finally get chickens.

It was also the same date as the Oklahoma City Bombing, the USS Iowa gun turret explosion, the Jews attack the occupying Nazi forces in the Warsaw ghetto, and anti-Jewish riots breakout in Palestine.

Okay, so I froze the eggs yesterday in the ice cube tray and got them out today. They didn't just pop out like icecubes, I had to pry each one out with a knife. Two cubes equals one egg. I stuck them in a freezer bag and I'll let them sit there for a while and use them later... will let you know. :thumbup1:
