Food storage is a hallmark of Utah County's prevailing religion and a growing trend as the economy slows. But there are some things that just don't belong in a can, according to one Utah County expert.

Fruits, veggies and meats are fine with the proper precautions, but other foods with low acidity don't make good canning candidates, said Jana Darrington, family consumer science agent for the Utah State University extension in Provo. When canned at home, items like butter and breads can provide fertile grounds for the paralytic illness botulism, she said. "We're just in the beginning stages of researching and trying to develop a safe method," Darrington said. "Commercial enterprises have certain equipment and an ability to process that we can't do in our own kitchen."

Caused by the bacterium Clostridium botulinum, botulism is a rare but potentially fatal illness. It tends to show up in canned goods when three criteria are met: low or no oxygen, low acidity and a little bit of moisture. Butter is one such f ood, Darrington said.

"Butter is 17 percent water," she said. "We don't know if there is any safe method for canning butter at home at this point."

Conventional prescriptions do exist in the canning world for preserving butter or margarine in cans, bottles or jars. Some even call for the boiling of the containers first to kill bacteria. But the University of Georgia's National Center for Home Food Preservation issues this warning on its Web site: "If there happened to be spores of certain bacteria in there, these procedures will not destroy those spores for safe room temperature storage."

Darrington said food storage buffs are better off buying canned butter, which is prepared safely using commercial equipment.

Bread is another point of concern for the same reasons -- moisture, low acidity, no oxygen when vacuum-sealed in a can or jar. Darrington said USU researchers have devised ways to safely can bread and cake, but the results are "not palatable." That's because they generally rely on lemon juice to increase acidity, she said.

"Either the bread didn't taste good but it was safe, or it was an unsafe product," she said.
Instead, the National Center for Home Food Preservation recommends finding recipes that can be frozen.
Some rumors about eggs also raise red flags: Despite what's said, you cannot keep eggs for very long at room temperature, Darrington said. Certain recipes advocate rubbing oils on the shell to protect against salmonella. That doesn't negate the need for cooling -- eggs must be kept at or below 40 degrees Fahrenheit, she said.

Yes, thank you. I've heard so many say how wonderful canning butter is but it just makes me so nervous because I know it's not safe, but no one will listen. It's always "I've always done it and there were no problems." Like those who don't water bath their jelly or pickles or salsa because that's the way Mom did it, I've always done it that way, I've never had any problems. Can you say Russian Roulette?

I threw out ~ 10 qts of butter I bottled myself. I don't want to be deathly ill as a result of using the butter in bad times. I am going to order some canned butter from Australia.

actually, pickling is a method, not really a product. Pickling is the process of using a brine. brine can be salt, vinegar or a combination of both. done correctly pickles don't need to be canned (although they will not last near as long). for example, you can smoke, salt, can, or pickle meat to preserve it.

I wonder about ghee though.. that is sold in indian grocery stores in my area, and it is jarred clarified butter. Does it make a difference that it has been clarified first?

It makes a difference to me. I don't like clarified butter. It's just the oil, none of the real flavor! But that's just my opinion. Others may like it just fine. I know for lobster, I prefer melted butter instead of the clarified butter that comes with it. The Red Feather Butter is good. I have also canned my own butter and used it after 3 years. No problems so far.

They "Red Feather" also market canned cheese as well. Both are pretty good and I imagine will be priceless should TSHTF. One idea you may want to try is to cut the top and bottom off the can and use the lid you last cut to push the cheese or butter out of the can onto a plate for ease of use.

I got my order of Red Feather butter yesterday. Too late for me to order from the sale, Aldon, but thanks for posting it. I would like to try some of their other products sometime and, perhaps get more of their butter. We'll see.

I have found one online source of Australian tinned butter in Australia and that's AMWAY and I think it's Red Feather which is NZ?. It just gets shipped off to the States LOL. Cheese is craft, packed in alfoil, non-tinned and with a two year expiry date roughly and is yellow and is found readily in supermarkets. No powdered cheese sources. Ugh.

Resurrecting another old thread. Mind you that the specials listed in this thread are dead and gone, and mredepot.com hasn't had canned cheese in over a year. But you can still get canned cheese and canned butter from internet-grocer.net
