This is the best fudge recipe - created by a man who made fudge hundreds of times to get it right. The web site has tips, variations, etc. Evidently he no longer hosts the site so others have taken it over to continue his legacy.

SKAARUP'S FANTASIA FUDGE

rights reserved.

This is a medium chocolate fudge with creamy texture. It serves as
the backbone to dozens of other fudges.
Follow the rules I?ve laid down on this web site and you'll do fine.

1/2 cup Butter
2 1/2 cup Sugar (extra-fine granulated preferred)
5 oz. Evaporated Milk (one small can)
12 oz Semi-Sweet Chocolate Chips (Hersheys or Nestle)
6-7 oz. Marshmallow Creme/Fluff (1 Jar)

(may substitute 2 cups mini-marshmallows)

1 cup Walnuts (chopped) -or- 4 oz. bag (optional item)
1 tsp Vanilla Extract


Directions:
Line a 9? x 9? pan with aluminum foil and set aside. Place
chocolate chips, vanilla, and marshmallow cream into a 3-quart
saucepan (or Pyrex bowl) and set aside. Chop walnuts and set
aside (optional). Heat milk at Medium setting until warm then add
sugar. Bring to a rolling boil (Medium-High), stirring constantly with
a wooden spoon. Continue to boil for [8] full minutes -or- if using a
candy thermometer continue boiling until the boiling temperature
reaches 235?F but do not exceed 9 minutes rolling boiling total.
Remove from heat and add butter. Stir until dissolved (but no more
than 30 seconds).

Pour hot mixture over chocolates, vanilla, and marshmallow cream
without scraping the sides of the hot saucepan. Mix until the
chocolates are melted. Add walnuts if desired. Mix thoroughly and
cast into prepared pan. Cool at room temperature. Chill in
refrigerator prior to cutting. Remove from pan, remove foil, cut into
squares.

I disagree, my husbands fudge is the best. I am eating a piece right now. The best part is that there are no nuts, just creamy fudge, yummy!

I love a smooth creamy fudge. So why on earth would anyone ruin the smooth creamy consistency of good fudge with hard foreign objects scattered throughout the fudge?

Putting nuts in fudge is not much different than putting gravel in.

I love nuts, but they have their place and it's certainly not in fudge.

I don't disagree with you on much, but fudge needs nuts! yummy!

Nuts are optional of course in any fudge recipe. I like the flavor of nuts & chocolate and so do many others i.e. Snickers is the most popular candy bar (my favorite too).

Now, some "creamy" fudges taste more like thick homemade powdered sugar frosting . . . :001_ssuprised: :sad:

I have also tried dozens of fudge recipes and this is the best (trust me - would I lie to you?). However, if Jay & Larna would like then I would be happy to taste test their fudge at our get together in a few weeks and give my "expert opinion". :l0 (46): :thumbsup:

I am going to try the two white fudge recipes on the site and see how they are.

This recipe looks just like the one on the hershey chocolate chip bag?

what is the difference. looks like a very common recipe to me been around forever.

By the way I vote for nuts too!

The ingredients are common - but he has come up with the right amounts to use. Also his technique is VERY important - so read the tips for making fudge. They are simple but make a huge difference. Just making one change made it so my fudge turns out instead of turning grainy.

I might try this, too. With nuts. I agree on the thick frosting comparison. :l0 (6):

If it's some "other" flavor, like minty or oreo or something, no nuts is alright.

I love nuts, all kind. I teach them in SS at Church, I live with them at home, I even raised a few from the shell to become mothers of nuts. I even like nuts in my fudge.

However, on second thought, keep then nuts out. All they do is take up space that could be reserved of chocolate, the food of the gods and the elixir of life.

Now if I could only find chocolate flavored jerky and pemmican for my food storage. It would save a lot of space!
