This is about as complete a list as I've ever seen--thank you!. The uga.edu/nchfp website has a "course" on safe food preservation--mostly canning, but includes freezing and even dehydrating if I remember correctly.

Also, the msue.msu.edu site has much more than apple pie filling. That site has recipes for virtually everything you could ever want to can: fish, seafood, venison, beans, etc. It's probably the site I use the most.

http://www.freshpreserving.com/pages/home/1.php is a Ball/Kerry website, so it's not as detailed as some of your County Extension sties, but it does have some trouble-shooting info. I've found the section on jams/jellies esp helpful--what to do if a batch fails to set, why the fruit floats to the top, things like that--but it covers a lot of other common problems.

I noticed that one of the canning sites says it is not safe to can pumpkin. My grandmother told me years ago that one of her wedding gifts was a bag of dehydrated pumpkin. I intend to do that with our pumpkins this year. We'll have enough emergency canning to do if the electric grid goes down without doing pumpkin, too. I'll do it in thin sheets of pureed pumpkin. Hope this is useful.
